What were we to do when the warm and luminescent 2020 vintage delivered up a glut of stellar Pinot Meunier from our 'Grand Cru' site Mount Harry in East Sussex?
A precognition I had many years ago came like a bolt from the blue: let's make a single vintage, single variety, single vineyard gin – a gin for wine lovers.
Working with Silent Pool Distillers in the Surrey Hills, Ana and I selected botanicals that best complemented our beautifully ripe grapes: Serbian juniper, coriander, angelica root, clove, black cardamom, wild forest pepper, rosemary, jasmine, and lavender.
We let the vintage wood-fired boiler and copper still work their magic.
Precognition Gin emerged from the steam-filled haze.
A London Dry Gin in style, it's pure and juniper-led with a smoky, floral top note that's perfect in a Martini or a gin and tonic. We always keep a bottle and a set of glasses in our freezer for emergencies.
Man, after all, cannot live on wine alone.

TASTING NOTES: Unique combination of familiarity and intrigue, traditional pine-rich juniper and lavender floral character are contrasted by a deep smoke that presents throughout. Along with its unmistakable grape spirit backbone, the elements present in this gin work cohesively to bring complexity, balance and satisfaction.
